Pizza stones are designed to achieve high temperatures and have a baking surface that helps the dough evenly cook into a dry, crispy crust. At home, conventional ovens seldom reach those temperatures, while cookie sheets make less effective surfaces. 1). Place your pizza stone in a cold oven.
2). Preheat to 500 F. Once the oven is preheated, so is the stone.
3). Slide the pizza onto the stone.
4). Bake until cheese is lightly browned.
5). Remove the pizza and turn off the oven.
6). When cool, brush the stone, don't wash it.
1). Use a stone brush and hot water. Don’t soak your stone by fully submerging it underwater.
2). Use a small stream of water to wet the surface followed by a thorough scrubbing with the brush. (Never use soap!)
3). Air dry the stone instead of baking it dry because any absorbed water being forced out in the oven can potentially cause the
stone to crack.
