If you love artisanal pizza, you’ve probably invested in a pizza stone by now. These specialized cooking tools heat evenly in order to deliver the just-right baking temperature for pizza dough, and they have a porous surface that draws out moisture from the dough as it bakes, so you can get a crispier crust than you would with a traditional baking sheet.
Making pizza at home lets you personalize it to your liking, but the challenge is how to mimic the results of a traditional pizza oven. These stones are made of cordierite, a natural mineral that is heat resistant to 1470°F (800°C). The same material used to make kiln shelves, cordierite is durable and, unlike ceramic, won’t crack or shatter if subject to sudden temperature change, so the stones are excellent for use in a barbecue. What’s more, they draw moisture out of the dough to ensure an evenly cooked and crispy crust.
They can also be used in an oven and to cook other items such as breads, bruschetta and quesadillas. Hand wash only.

1). Place your pizza stone in a cold oven.
2). Preheat to 500 F. Once the oven is preheated, so is the stone.
3). Slide the pizza onto the stone.
4). Bake until cheese is lightly browned.
5). Remove the pizza and turn off the oven.
6). When cool, brush the stone, don't wash it.
1). Use a stone brush and hot water. Don’t soak your stone by fully submerging it underwater.
2). Use a small stream of water to wet the surface followed by a thorough scrubbing with the brush. (Never use soap!)
3). Air dry the stone instead of baking it dry because any absorbed water being forced out in the oven can potentially cause the
stone to crack.
